Fabulous Eats: CPK's BBQ Chicken Pizza

On Friday night I was craving California Pizza Kitchen's Barbecue Chicken Pizza.
After being in the car for 3 hours and fearing baby Hunter would not enjoy another hour out in a loud busy restaurant, I decided that I could make the pizza my self.
So I did. Huge Success.
Recipe Below.

Barbecue Chicken Pizza
Pizza Crust: (Makes Two Pizza's)
1 1/2 Cups of warm water. (not lukewarm)
1 tsp of Active Dry Yeast.
4 Cups of All-purpose Flour.
1 tsp Salt.
1/3 Cup of Olive Oil.
Sprinkle yeast over 1 1/2 cups warm water. 
Let stand for a few minutes.
In a mixer, combine flour and salt. 
With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Pour in yeast/water mixture and mix until the dough comes together in a sticky mass.

Form the dough into a ball and in a separate mixing bowl (with a light drizzle of olive oil) toss the dough to coat in olive oil, then cover the bowl tightly with plastic wrap and set it aside for 1 to 2 hours, or store in the fridge until you need it. 

Once the dough is made here's what you'll need to make the pizza.
(Enough ingredients for TWO Pizza's)
2 Whole Boneless Skinless Chicken Breasts. (I used 1 per pizza)
1/2 Cup Barbecue Sauce.
Olive Oil, For Drizzling.
Salt For Sprinkling.
16 ounces, Fresh Mozzarella Cheese thinly sliced.
1/2 Whole Red Onion, thinly sliced.
Chopped Cilantro - to taste.
Preheat oven to 375 degrees.
Place Chicken in ovenproof dish and sprinkle on salt.
Pour BBQ sauce over the breasts and turn them over to coat. 
Bake for 20 to 25 minutes, or until chicken is done. 
Remove from oven and cut into a fine dice. Set aside.

Increase oven temperature to 500 degrees. 

Roll/stretch out one pizza crust. (Take half the dough for one crust)
Lay it on a sheet pan drizzled with olive oil. Drizzle a little olive oil on the crust, then sprinkle on a little salt.
Spread the extra BBQ sauce evenly on the crust.
Top sauce with mozzarella. Sprinkle on the diced chicken and thinly sliced red onion.
 
 

(Remember you are using half of the ingredients so you can have TWO pizza's)
Sprinkle again with a little salt, then bake for 15 minutes, or until crust is golden brown and toppings are bubbly.
Remove from the oven and sprinkle on chopped cilantro. 
Cut into squares and serve immediately 
 
 

The pizza is delicious.
We used half of the ingredients and one Pizza was PLENTY for two of us. 
We had leftovers for lunch the next day. 
We also still have the other half of the dough and ingredients in the fridge for another pizza night later this week 
(SO worth having this meal TWO times in one week, I promise)
